Description
Eduardo Soler founded Ver Sacrum in 2012 after spending time in the Grenache-dominated region of Gredos, in Madrid. This wine is produced from young Grenache vines planted in the Uco Valley sub-region of Chacayes and it undergoes semi-carbonic maceration for 4 days before wild-yeast fermentation in 500-litre used French oak and 400-litre clay amphorae. It is then aged in a combination of used French oak casks and amphorae for 18 months, followed by 20 months in bottle. This is an exciting wine of remarkable innate purity, freshness, complexity and length.
